If you were inviting sender from UI portal, because all you input is the users email address, sender language will follow the account default language preference. There could be two ways to work this around:

(1)contact support team([email protected]) and set your account's default language as French. But this will affect ALL the newly invited senders

(2)use my bulk invite sender tool to invite senders and give sender an initial language, below two blogs provide you step-by-step guide on how to use the tool:

Is a solution to leave the default as French but just amend the email.invitation template to have both languages?

Yes, you are correct! To create a bilingual email template is also one of the options you can choose.
