We have a flow in my system where you can delegate a signing to another person that is not in our system. You need to provide us with their email address and we send them a token where they can Initialise the document.

First off, this is a very welcome addition to the integration options available. I've been struggling using the REST API directly from my Force.com app. Are there any examples on how to create a simple package, like there are with the other SDKs?

Hello! After a Package is Completed its available at the plataform the option to manually Archived the transaction . Ok with that.
