Accept Only + Populated Merge Fields

Yes, it's possible to achieve this goal. There's a new feature called "no signature fields" introduced in 11.48 which allows to have accept-only + label fields, please refer to below developer blog for more details:

Great to hear that!
For removing default consent, if most of your transactions still need the default consent form, I would suggest to use a two-step approach to create the transaction then delete the default consent (default consent has document id of "default-consent").
If on the other hand, most of your transactions don't require a default consent form, I would suggest you to contact support team ([email protected]) and remove the default consent at the account level. For those transactions need a default consent, you can manually Upload Customized Default Consent
