What could be causing this?

We have made a fairly innocuous change to a PDF template agreement, just the text of an address, however when rendering this on the e-signature page of our application instead of the new text, we get some strange garbled capitalised text. Looks a bit like this:
Can anyone think what we have done, other than changing the address, that would cause this?
We have not changed the font. I have not checked acrobat versions in use which is on my radar as well.
Any advice or suggestions gratefully received.

Monday, January 24, 2022 at 11:12amThanks Duo. Unfortunately I am not in a position to determine what is, and isn't sensitive information, I'm a test manager and I would happily share anything with anyone in pursuit of a bug!
I will talk to the appropriate folks tomorrow, we do also have official support lines as well which I will also investigate.
